One of Mexico's most popular and beloved aguas frescas is tamarind water, also known as "Agua de tamarindo." Its unique blend of earthy-sweet and sour flavors, coupled with its refreshing acidity, make it a particularly enjoyable beverage on a hot day. Let's make it!
Ingredients
15 tamarind pods
2 quarts water, divided
1 cup of sugar
Directions
Step1: Gather our ingredients
Steps 2: Using 1 quart of water of the 2, bring to boil in large pot over high heat
Steps 3: While you wait for the water to boil, go ahead and peal the pods. Make sure you discard the shell and strings
Steps 4: Once the water comes to a boil, turn the heat off and put in the cup of sugar along the the tamarind you pealed. Let it sit for about 1 hour and 30 minutes.
Step 5: After letting the pot cool down, with your fingers, squeeze out the seeds from the tamarind and remove the remaining strings.
Step 6: Place the pulp and liquid in the blender to blend the pulp. If you love the chuncks of pulp, you may skip and stop at this step. Add other quart of water and serve with ice and enjoy :)
Step 7: Run the Juice through a strainer if you do not like the pulp
